Healthy Hash...for any meal

Recipe

Ingredients:

  • 3 chicken sausages, sliced (recommend Gluten-Free sausage like from Applegate)
  • 3-4 parsnips peeled & sliced (substitute with 1 large potato or 1 large turnip) (*Note: For keto-friendly, use chayote, parsnip or turnip as potato substitute.)
  • 1 teaspoon coconut oil (substitute with ghee)
  • ½ teaspoon pink Himalayan salt
  • ½ teaspoon black pepper
  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ½ teaspoon onion salt
  • ½ teaspoon garlic powder
  • 1 cup red or yellow bell pepper, diced
  • 1 cup mushrooms (oyster or button), sliced 
  • 1 tablespoon fresh cilantro
  • Bone broth ***See NOTE below on benefits...(recommend low-sodium chicken such as LonoLife Chicken Bone Broth)
  • ¼ tsp Zesky Garlic PLUCK seasoning
  • 1 cup baby spinach (substitute with arugula)

Directions:

  1. Heat 1 teaspoon of coconut oil or ghee pan over medium heat adding sliced sausage until browned and lightly crisp.
  2. Add diced parsnips and let sizzle. 
  3. Add in mushrooms and red bell pepper. Cook, stirring occasionally and the vegetables begin to soften.
  4. Season with pink Himalayan salt, pepper, cumin, fresh cilantro, paprika, onion salt, and garlic powder.
  5. Add bone broth (or 2 tablespoons of prepared LonoLife Chicken Bone Broth)
  6. Add baby spinach and cover for about 5 minutes. Add more bone broth if needed to make sure to keep it juicy and the hash nice and steamy.
  7. Optional: Top off with sunny side up eggs cooked in ghee, avocado, red radish and some purple cabbage.
  8. Enjoy!
